Then drain away water using paper towel.Put all fish aside after preparing them.Cut half of a leek into slices.Slice a chunk of ginger after peeling.Smash three cloves of garlic.Put them altogether into a plate.Add some Sichuan peppers, star anise, and dried chili peppers.Let's make the sauce.Pour a spoon of light soy sauce, three spoons of rice vinegar, and two spoons of sugar into a bowl.Add a spoon of cooking wine, and appropriate amount of salt.Mix until fully blended and put aside.Heat oil in the wok, and fry the yellow croakers.Make sure high temperature for the oil,so that the surface of the fish becomes crispy quickly.Shake the wok a bit from time to time, so the fish are heated evenly.

When one side becomes golden brown, turn to the other side.Fish meat tastes firmer and smells better after frying.When both sides are golden brown and look crispy,remove all fish aside.Use oil left to fry leeks, ginger, garlic, Sichuan peppers, star anise, and dry chili peppers until they become fragrant.After they become fragrant, pour in the sauce we've made.
